I decided this weekend our menu's have been a little dull and boring lately, time to spice them up a bit. I ducked down the shops for reduced meat, and for $20 got 2 meals of lamb fillets, 2 meals of pork medallions and a pot roast. $4 a meal - under target!
Now what to do with them?
Monday: Mediterranean Lamb Salad
Tuesday: Apricot Chicken
Wednesday: Mince Pie
Thursday: Moroccan Chicken Kebabs
Friday: Jel Ring Pizza
Sunday: Chicken Fried Rice
I'm actually inspired by that menu! Can't wait to get cooking!

Mmmm...Jell-ring pizza. I haven't made that for AGES! Actually, think I gave my MIL back her jell-ring. Very yummy..... must make it again sometime.

Ali click on the link for the recipe (it's on the Tupperware website). I've never made it before, but everyone keeps raving about it, and I never use my jel ring at home ;) so I thought I'd better hehe

I see you've still got the apricot chicken going, it must be a real favourite. I clicked on the link to see what the jel ring pizza was all about and have to say to me it sounds terrible. But all the other recipes sound great.

Lots of yummy stuff here, and I am completely fascinated by the jel ring pizza; I'd never heard of that before!

River you wouldn't believe how much of a favourite Apricot Chicken is. Neither of my girls eat much dinner, but tonight they both had seconds (twice LOL) of both chicken and rice. And the dog ate the leftover sauce with rice for his dinner, no wastage YAY!.
Honestly it's about the only thing (apart from spag bol) they eat without complaint!
