Yum, chicken burgers. Do you make your own? Or do you use bought frozen ones or rissoles from Lenards? I have a great recipe.......

River, I usually buy them in bulk on special from Woolies - the crumbed ones? The last lot I think I got 24 burgers for $4. I'd love to try a "proper" recipe though...

Chicken Burgers:-
600g chicken breast mince
1 1/2 cups breadcrumbs
Mix together:-
3 tablespoons buttermilk
1 egg white
1 teaspoon salt
1 teaspoon pepper
1 crushed clove garlic
Extra breadcrumbs to coat
Set oven at 180*
Add mixture to chicken mince. mix really well. Add the 1 1/2 cups breadcrumbs and mix in well (use hands, it's easier). Roll into burger shapes (not too big), roll burgers in the extra breadcrumbs.
Fry in hot oil to seal, about half a minute each side. Be careful not to overcook at this point. Burgers should be "just" or not quite golden. Bake in oven about 12-15 minutes.
I portion out the leftover buttermilk (it comes in 600ml cartons) into babyfood jars and freeze to be used in later batches of burgers and the leftover egg yolk goes into a baked egg custard.
Use less salt if you wish and the choice of black or white pepper is up to you. White pepper gives a more peppery taste which small children might find too hot.
